One of my favorite unusual flavor profiles is mastica. Ask any two people who taste it and they describe it differently; birch beer, tree bark, minty pink-flavored bubble gum, earthy-sweet. In Greece, you find it made into gum, syrup for stomach problems, liquor, candy, and more. It's tree sap that is produced only in Chios. One of my favorite experiments with new friends is to have them taste something with mastica in it and describe the flavor to me.


I have been thinking for a while of putting this in a jam and thought sweet strawberry would be perfect with earthy, woodiness of the mastica. I am curious to know what you think!

  • Strawberries, sugar, pectin, lemon juice, mastic powder (mastic, malodextrin), mahleb.
