How we reduce our waste to "practically nothing"

I have been asked at markets how we have managed to reduce our waste to practically nothing. Here is a little insight! Last week, we were juicing lemons for our jams and usually it creates the waste of the pith and the peel. We happen to know someone that loves limoncello who takes the peels and part of the pith off our hands to make his liqueur. This reduces the amount of compost we create. Just one more way we try and create less waste.
